Change ur Sheep/Rams
This will not work on regular sheep, only ones that came from breeding (offspring).
So breed whatever U have, like the ram U get for the quest, Brutus, with whatever ewe U want.
Then the offspring can be changed using this method.
WARNING: Entering the wrong code could cause ur farm to not load !!!
So as with any method listed here, USE AT YOUR OWN RISK !!!
As with all glitches, U can be locked out of ur farm and or BANNED, you have been warned.

Got to ur English Countyside
Open ur Sheep Pen
In Charles turn breakpoints on
Take a sheep out that U want to change into something cool and place it on ur farm (must be an offspring sheep)
Wait for Charles to pop up
Click the Edit Request Tab (top), click the AMF tab (bottom)
Right click on the first folder and choose expand all
Look for the line "metadata", to the right of that it will say "String" (see attached screenshot)
to the right of that U will see a long ass code, this is what U want to change.
Take out the code that's there and paste in the new code. (codes listed below)
Then click Execute, turn off Breakpoints and click execute again.
That's it, go back to ur farm and refresh/reload ur farm.
You will see the changes after farm is reloaded.

On some farms the sheep may turn back to their original colors when placed in the pen.
If your sheep/rams does change back then do this.
First just try reloading ur farm, this works for some ppl.
If refreshing didn't work then U gotta do this,
Take all the sheep out of ur pen so that it's empty and delete it.
Buy a new one and build it up 1 time and that's it.
leave it at level 1, then when u placed modded sheep in they will stay that way.
Plus if later down the road they start changing back again and U have to delete it again,
you won't be wasting all those building supplies, but to each his own.
